Check out the Celebration Day video; Percy still rocks. IMHO he is even better than he was back in the day; he can't hit the high notes but has a far more expressive voice. He's the man.

Hmmm, 7mm is 0.275", a little over 1/4". That's not much. You may be able to get away with it if the wood is in good condition (no cracks), the bridge screw holes are drilled properly, and you use all 6 screws to distribute the string tension. Watched the video last night, it was cool imagining my LP being built. It was shocking to see the guy in the spray booth finishing a body with no respirator on, OSHA would freak if they saw that. The other surprising thing was how much glue was running all over the glued parts that wasn't wiped off....
