I think it depends on what is in the modeling amp.
I have a flextone that came with a Celestion 70/80 and that is a terrible speaker in every application I've ever heard it.
I put in an eminence red white and blues and it was a huge improvement in every way without changes any settings.
Usually however cheap speakers (like that shitty 70/80) are used which don't sound good, so putting in a quality speaker will help, but as surf says a flatter response speaker is usually desirable in a modeling amp.
If the vet 30 is your tone then I think it will help your modeling amp get the tones you like
