What makes the two channels different? Is it just a bright cap or is it more extensive than that?

One channel is much brighter than the other, has do with the values in the design. Many guys instal master volumes which will work somewhat similiar to the VM in that you set the master then use the bright and normal channel to mix your tone (like body and detail) or if you do not have a master then you can jumper the channels and mix them that way too.
